Black Soybeans, know as Douchi or black beans, are a type of fermented and salted black soybean. They are a flavouring most popular in China, where they are most widely used for making black bean sauce dishes. Black soybeans should not be confused with the black turtle bean, a variety that is commonly used in Central and South America in dishes such as burritos.
